Microwave Potatoes

Hi.  Today I am going to post another recipe that we love and is superfast!

4 small potatoes, preferably red potatoes
2 Tbsp. olive oil
Lawry Salt, or seasoning that you choose

Quarter the potatoes and put in a microwavable casserole dish.  Drizzle one tablespoon olive oil over the potatoes.  Then season the potatoes.  Microwave the potatoes for about 5 minutes.  Then turn all the potatoes over and put the last tablespoon olive oil over the top and season again.  Then microwave for another 5 minutes or until the potatoes feel cooked through. 

Ready in about 15 minutes!!
